Do you know for sure your the booster is bad? Brake problems are usually found elsewhere, brake boosters are usually pretty bulletproof.

When it comes to restorations there are basically two ways to go. Put it up on blocks and start at square one or you can do a rolling restoration.

With the first you'll get everything done at once but you won't be able to drive it for years. The second way is to drive it and fix things as the pop up that won't keep it off the road for years like bearing replacement, floorboard repair, or suspension rebuild, etc.

With the second choice you can drive it for two or three years decide if you like it enough to go full blown resto or move on to something else. Should you decide to sell you'll have a driver to sell rather than a disassembled project.

If you decide it's worth a resto by that time you'll know exactly what it will need.
